The week is written on the plate

One single menu, written each week with whatever the farm has harvested. No fixed à la carte: the season decides, we cook.

The idea

What the farm gives, the kitchen serves

Every week the harvest leaves Saint-Austremoine, in Haute-Loire, and arrives on rue de Pondichéry. The menu follows.

  1. 01

    One menu, every week

Written with the harvest: fruit, vegetables, herbs, eggs, poultry, lamb, honey, snails and churned butter, from our 67 hectares.

  2. 02

    Made for you

Preferences, allergies, diets: tell us when you book and we adapt the menu.

  3. 03

    Made in house

Vinegars, pickles and preserves are made in our kitchen, to carry the season from one week to the next.

  4. 04

    Nothing is wasted

The restaurant's organic waste goes back to the farm as compost, for the soil and the animals.

In the kitchen

Two trades, one rhythm

Raphaëlle Bathellier

Head chef

Raphaëlle receives the harvest every week and writes seasonal menus: simple, lifted by homemade preparations.

Tanguy Hanoun

Founder, farmer and cook

A former chef who went back to the land, Tanguy carries the La Borie project between the farm and the restaurant. Every Sunday he writes the letter « Suivez les saisons » (Follow the seasons).

The cellar

Winemakers, and our walnut wine

Our cellar brings together winemakers from nine regions:

  • Auvergne
  • Alsace
  • Burgundy
  • Loire
  • Rhône
  • Jura
  • Languedoc
  • Savoie
  • Champagne

And one house wine: our walnut wine. The fresh walnuts are picked in early August, then left to macerate. What comes out is a sweet apéritif, somewhere between port and madeira.
