Where it comes from
From the farm to your table
Dylan looks after the snail pens. The big gathering is a team effort: for the fourth year running, we picked up more than 12,500 of them in a single Friday.
In November the pens are put to bed for winter. Dylan gathers the last stragglers, the snails still too small to sell.
